A nice day today...


Hope that you all had a nice day today. I did.

Today I vacuumed my house.

Made some homemade salsa this afternoon.

Made some burritos for dinner and poured the homemade salsa over them and baked.I added about a cup full of homemade salsa to half a jar of roasted tomato alfredo spaghetti sauce..mixed this together and poured over my burritos that were made with organic beef that had half a packet of taco bell taco seasoning added to 2 lbs ground beef and then sprinkled inside with a little cheese..rolled them up burrito style then topped with the salsa blend and additional cheese..baked for 38 minutes in a 350 degree oven.

Made golden hominy on the side..yum.

I posted some information here about bat websites...that can be used for homeschooling. We learned about this topic about 2 yrs. ago..it was alot of fun.

I worked a little in the front yard trying to get some overgrown vines off of the pine trees in my front yard..we have a stand of about 7 pine trees in our front yard and they had some carolina jessamine and then a prickly wild vine was trying to start growing in amongst things and the jessamine was going a bit wild too out there..so had to be trimmed a bit.

I was outside this evening taking care of watering my plants on the deck and taking care of my ducks..anyhow..when I was watering my plants..I was standing on the patio and all of the sudden a big rat jumped right between my legs..oh my gracious you should have heard me scream! I jumped pretty high too as I was afraid that the rat was going to jump up my skirt..eeek! Luckily it ran one way and I ran the other..ha.

Gave me a bit of a scare it did! uggh.

Ok..how I made that salsa..I bet you wanna know don't ya?

O.k. here it is:


SALSA


I took 5 ripe tomatoes and sliced the tops and the end off then cut them in half and put them in the blender

Then I added about 2 tablespoons minced garlic(it comes in a glass jar in the produce section of your grocery store)

Added about a tablespoon and a half of dried cilantro

1/4 cup lemon juice

1/4 cup apple cider vinegar

1 jalapeno pepper unseeded plus 2 jalapeno peppers seeded/chop these in a chopper seperately then add to ingredients in blender


Blend all together until chopped/pureed well. Add a touch of red food coloring if you wish a redder color as the fresh tomatoes do not look as red as the salsa you'll find in the store.


That's it..pretty easy.

One of the last times I was in Winn Dixie the sales clerk in the floral department informed me that Mondays are usually the days when some of the plants "expire" on their date stamps and then are put on clearance..well..I had to make a large grocery trip yesterday afternoon as the cupboard was getting a bit low..anyhow, while there I saw that they had marked their small pots of English Ivies down to $1.99..who could resist?I got one for my husband to put on top of his desk here in the office..of course I'll get to enjoy it too as I'm the gal that takes care of all the plants both in the yard and in the house...so I guess I got "us" a new indoor plant..ha.

the salsa sounds so good, I'll have to make it, thanks. I would have died if a rat ran between my legs, literally. Where was it? Are you right by water?

Hi Tina,
The burrittos sound yummy. I once opened my grill and a big rat stuck his head up at me. I did a dance and screaming too. I hate rats.

We fired our grill up one spring and fire shot out of the back, ran up the wall and back and forth across the garage. There was a mouse in there and his fur was on fire. It was a little ball of fire zipping back and forth across the wall. We watched in amazment at the fire ball not knowing at the time it was a mouse. The poor little fellow dropped dead in the driveway.
