Cinnamon Spiced Pear Topped Cake...

Developed another pear recipe today. This one is a very moist cake. It's not the prettiest cake around..and best served with whipped topping or a scoop of vanilla icecream..but none the less..very tasty.



~CINNAMON SPICED PEAR TOPPED CAKE
in a large mixing bowl combine the following:

3 cups all purpose flour
1 cup sugar
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda

Mix together well.

In another bowl cream together:

2 eggs
1 tsp. vanilla
4 heaping Tbs. softened Smart Balance spread/margarine, or butter

Pour this mixture into your dry ingredients and mix together well. Mixture should resemble a crumbly texture.

Pour in 1 1/2 cups milk
Beat well for about 2 minutes.

Pour into a buttered 9 by 13 pan.

Meanwhile combine 7 peeled,cored and thinly sliced pears
with 1 Tbsp. lemon juice.
Toss well until coated.
Add 1/2 cup sugar. Toss well.
Add 2 Tbs. cinnamon. Toss well until pear slices are well coated.

Gently spoon on top of cake batter.
Bake at 350 degrees for 1 hour.
Cake will be very moist.
Best served with whipped topping or a scoop of ice cream.

Oh, it looks absolutely mouth-watering! We don't eat a lot of pears but this will be a good excuse to do just that!
