Apple Cake recipe...

Thought I'd share another recipe from the "Reliable Recipes" Calumet Baking Company cookbook from 1912

This time for an Apple Cake.

Apple Cake:

2 cups pastry flour
2 level tsp.calumet baking powder
1/4 tsp.salt
1/4 cup butter or lard
yolk or whole of 1 egg
2 tablespoon sugar
2/3 cup milk

Sift flour, then measure:add baking powder, salt and sugar, and sift three times:chop shortening in with spoon,preferably with knives, or knife and fork:beat yolk add milk and mix together: spread in square tin about 3/8 inch thick: cover with melted butter.
Core,quarter and slice in eigths 5 tart apples,lay in rows,lapping each other,cover with melted butter, 1 teaspoon of cinnamon and 3 tablespoons of sugar.
Bake at 350 for 30-35 minutes.

*** another type of recipe that my grandmother used to make, but I don't recollect her ever really having a recipe for it, but this recipe certainly sounds alot like the apple cakes she used to make though.
I think my grandmother mostly cooked "from memory" as she used to own a resturaunt in Washington.She was an absolutely terrific cook.

I like to think that I at least inherited that from her, although she never did really teach me..but I observed alot, and had to learn how to cook mostly after I was married.

Taste of Home cookbooks were what I used then and sometimes still do.... and now sometimes I just sort of start creating my own types of recipes from time to time as well.
I do try to write down any new creation I come up with though..especially if my family dubs it a "winner".

Anyhow..I hope you enjoy this "olde timey" recipe.

Sounds like a good one. I am not a big cake eater..but love apple cake. I have a poem somewhere about apple cake (NOT written by me)I will have to find it..really cute. I will have to try this recipe!!

I remember the type of apple cake my grandmother made being more of a coffee cake type thing, deriving the moisture from the apples than anything that was really sweetsy sweet.
so this is a good kind to have to go with coffee in the morning if one is inclined.
